For some reason, caramel corn reminds me of the fall and since we are celebrating September arriving… I whipped some up! I posted it to Instagram and a few people asked for the recipe so here it is – Soft and Yummy Caramel Corn!
Soft and Yummy Caramel Corn Recipe
Pop 1 cup of popcorn – makes about 6 cups popped. Pour into brown paper bag. (when you hit up the grocery store – ask for paper instead of plastic!)
In a large sauce pan mix:
1 cube butter
1 cup brown sugar
1/2 teaspoon salt
1/2 cup Kayro Syrup
Bring to Boil
add 1/2 teaspoon baking soda
The caramel will foam. Pour onto the popcorn in the brown paper bag.
Microwave for 1 1/2 minutes – Shake and repeat!
Pour into large bowl or onto cookie sheet and enjoy!
Note: I like to double the caramel recipe and add about 3 extra cups of popped popcorn. It makes it softer and more chewy.
